Production: Crushed, dried red pepper flakes are most often produced from cayenne-type peppers, though sometimes a variety of peppers are used such as bell peppers,cayenne, jalapeños, chiltepin, and all forms of New Mexico chili.
Qualities: Chile flakes are a spicy condiment that is often used to add heat and a tangy flavor to recipes.
They usually range between 30,000 and 50,000 on the Scoville unit range. (USA: ASTA: 11.9, SCOVILLE: 22,700 SHU and from India: ASTA: 21.3, Scoville: 54,000 SHU)
Common Use: It is common to see red chili flakes in pizza parlors and in Italian restaurants as a condiment. They are also added to many recipes including pickling blends, soups, sauces, and sausages.
