Production: The clove tree is an evergreen with large leaves and small flowers grouped in clusters. The flower buds turn from pale blue to bright red when they are ready for harvest.
Qualities: The essential oil eugenol is what gives cloves their strong, pungent, sweet flavour.
Common Use: Cloves are used in many culinary applications, spice blends such as pumpkin spice, tea blends like chai, as well as liqueurs and mulled wines. In dentistry, clove essential oil has been used for its analgesic effects.
Storage: Store in a cool, dry, dark location in a sealed container.
