Qualities: The name "phycocyanin" is derived from the Greek "phyco" meaning "algae" and "kyanos" which means "dark blue".
Phycocyanin is the main component in spirulina extract. It is an accessory pigment to chlorophyll and has a characteristic light blue color, absorbing orange and red light.
Phycocyanin is believed to support a healthy inflammatory response by inhibiting the key enzyme (COX-2) that is responsible for causing inflammation and chronic pain. Even though inflammation is the body’s first line of defense, when it goes unchecked it may lead to degenerative diseases and promote premature aging. Studies have shown that when phycocyanin was evaluated as an antioxidant in vitro, it was able to scavenge a variety of free radicals, thus reducing oxidative stress.
Common Use: Phycocyanin can be added to smoothies, juices, and many other recipes. It is commonly used in the food industry to add a blue color to sweets.
Storage: In order to prolong shelf life (up to two years after opening), store refrigerated in an airtight container and away from direct light as the pigment is light sensitive.
